1. Mix all ingredients in the spiral mixer (approximately 8 minutes).
2. The finished dough temperature should be between 28-30°C.
3. Rest dough for 10-20 minutes.
4. Take approximately 800g of dough and roll it out into a sheet of desired thickness (approximately 1
cm).
5. Cut 30cm long and 2cm wide strips from this sheet of dough (approximately 160g-170g strip).
6. Roll out strips and mould into a pretzel shape.
7. Bake pretzels for approximately 9 minutes at 250°C.
