1. Place ingredients into mixing bowl.
2. Beat on low speed for 1 minute.
3. Scrape down.
4. Beat on second speed for 10 minutes.
5. Deposit as required.
6. Oven temperature 180°C.
Yield: If baking a tray of cake or large speciality occasion cake, line the baking tray or tin with a layer of cardboard and bake on a lower temperature. When adding fruit to the batter, use 50 grams of INSTANT CLEARJEL. This thickens the batter thereby preventing the fruit from "sinking".
