Bain Marie (test method):
Place BAKELS WRAPPABLE ICING in a bain marie and heat to 55°-65°C while stirring. The product may appear lumpy at first as the stabilisers will take some time to dissolve, stirring will help to break up the lumps. Dip the completely cooled baked or fried goods and allow icing to cool and harden before packing and/or freezing. Cover the heating bain marie when not dipping goods as the BAKELS WRAPPABLE ICING can crystallise if left uncovered.
Microwave:
Place BAKELS WRAPPABLE ICING in a microwave safe container and microwave for 30 second intervals, stirring well between each interval. Heat to 55°-65°C and dip the completely cooled baked or fried goods, allowing the icing to cool and harden before packing and/or freezing. This method is suitable only for small quantities of BAKELS WRAPPABLE ICING (less the 1 kg).
For both methods we recommend only heating the amount of BAKELS WRAPABLE ICING needed as heating over long periods of time or re-heating can cause a grainy texture.
Do not melt BAKELS WRAPPABLE ICING over direct heat.
Highly concentrated colour and flavour preparations may be added however the stability of the icing may be affected. Preparations that contain water, propylene glycol, glycerine, glucose, corn syrup or invert sugar should not be used as they will reduce the effectiveness of the icing.
NOTE: All icings are only as stable as the baked or fried goods to which they are applied. We recommend using the lowest amount of water recommended in the recipe and ensuring that the baked or fried good is completely cooled before applying the icing. Do not add water, sugar
syrup, glycerine, honey etc. as the stability of the BAKELS WRAPPABLE ICING will be seriously effected.
